Nose:
powerful red berry aromas (cherry, raspberry) accompanied by cocoa and sweet spice fragrances.
Palate:
delicious and juicy on entry, a profusion of red fruit, full on the palate with silky, velvety tannin. The perfect example of a Grenache noir
Sommelier's advice: Thin crust roasted vegetable tart, goat cheese and thyme cakes
Grape variety/varieties:
Grenache noir
Harvest:
Terrace of pebbles over a clay matrix. Soil with low spontaneous fertility, regular water supply that is never excessive during the growing cycle, and plenty of sunshine combine to ensure that the grapes reach complete maturity.
Soil:
When fully mature, the grapes are harvested at night, and by machine, in order to avoid oxidation of the grapes thereby preserving the aromatic potential.
Vinification:
The grapes are totally de-stalked. Fermentation temperature is controlled around 22°C to preserve the varietal aromas. Maceration lasts 15 days during which time a gentle pumping over is carried out once a day. After running off, the wines are quickly racked to remove the “gross” lees.
Ageing:
The wine is aged for six months in concrete tank.
Alcohol content:
