Version 2 Coteaux Champenois 2017
Champagne - Côteaux Champenois

Tasting notes
Nose:
The first nose is very fruity and reminiscent of black cherry. Then notes of ripe strawberry appear accompanied by slightly vanilla and toasted aromas.
Palate:
The attack on the palate is suave and delicate like velvet. The tannins are subtle and the wine has a lot of elegance and presence on the palate. The finish is on small wild red fruits like blackberry or blueberry.
Sommelier's advice: Fine meal or with friends. Pork tenderloin - Capon - Calf sweetbread
Grape variety/varieties:
Pinot Noir 100 %
Harvest:
A year marked in spring by the frosts of April and early summer with flowering at the beginning of June followed by high temperatures. July and August proved to be more humid generating a disparate sanitary situation. The more clement weather afterward for the Côte des Bar area, allowed to limit the effects of the summer humidity and to harvest in dry weather.
Soil:
Chanzeux, parcel facing south on the Riceys terroir and worked according to the rules of Organic Agriculture for a yield of 20 to 30hl maximum.
Vinification:
Grapes are picked at a high level of maturity, close to 13%, in small 20kg crates. 100% de-stemming. Fermentation with indigenous yeasts. Maceration is a thermo-regulated wooden vat for 2 weeks. Putting in barrels and malolactic fermentation in barrels. Aged in 228 and 400-liter barrels (from high French forests) for 16 months.
