Nez :
citrus aromas and notes of grapefruits and ripe fruits.
Bouche :
broad on entry, fresh and dynamic on the palate. Notes of fennel.

Recommended food pairing : Rolled sole with white butter sauce and roasted vegetables.

Vendanges :
The harvest are principaly doing by hand and the other part of grapes with machine.
Sol :
The grapes come from the altered granite soils of the Northern Ardèche.
Vinification :
The visification is realised in stainless steel vat with temperature-controlled allowing a precise control of the temperatures.
Elevage :
6-7 months’ ageing on the lees in stainless steel vat. Prevention of the malolactic fermentation.
